Ice cream
CMC thickener reduces the amount of large ice crystals generated in ice cream, enhances its anti-melting properties and smooth and delicate taste, whitens its color, and increases its volume. It also lowers the usage of solid raw materials and the production cost of ice cream, with an addition amount of about 0.5%.
Noodle products
The application of CMC thickener in bread production can make the holes uniform, increase the volume, reduce the crumbs, prevent the bread from collapsing, and have the effect of heat preservation and freshness. The application of CMC thickener in instant noodles and rolled noodles can enhance the toughness of the noodles, improve the cooking resistance, and make the taste delicate and smooth. The addition amount of CMC in noodle products is calculated based on the total amount of materials at 0.5%.
Instant paste food
In paste foods such as instant peanut paste, sesame paste, almond paste, eight-treasure porridge, etc., CMC is used as a thickener. In addition to making the paste food soluble in cold water and smooth and delicate, it also has the characteristic of improving the taste of artificial sweeteners, with an addition amount of about 0.35% calculated based on the total amount of materials.
CMC sodium carboxymethyl cellulose is used in the food production process, and CMC needs to be dissolved. There are usually two methods:
First, mix CMC sodium carboxymethyl cellulose directly with water and prepare it into a paste-like glue solution for later use. When preparing CMC glue paste, first add a certain amount of clean water to the batching cylinder with a stirring device, and then sprinkle CMC slowly and evenly into the batching cylinder while turning on the stirring device. Keep stirring to fully integrate CMC and water. The reason for sprinkling CMC evenly and stirring continuously during the melting process is to prevent CMC from clumping and reducing its solubility, and to increase the solubility rate of CMC. The stirring time and the time for CMC sodium carboxymethyl cellulose to completely dissolve are not the same concept. Generally, the stirring time is much shorter than the time required for CMC to fully melt. The required time depends on the specific situation.
